turkey with stuffing

Stuff the turkey breast with the boiled carrots, lard, salt and pepper. Tie with the leeks, then brown in a skillet. When cooked, cool and slice. Brown the boiled potatoes and chicory in a skillet with oil, salt and chili peppers. Mash the potatoes with a fork, so it remains thick, and then with two spoons, roll the mash potatoes into little balls or bundles. Reduce the broth to half with the cooking liquid of the turkey. Pour the sauce on each plate, and carefully arrange the turkey and the mashed potato bundles.

1 pound turkey breast
1/2 pound potatoes
1/4 pound lard
1/2 pound chicory
1/2 pound leek
1 cup vegetable broth
1 tsp chilli pepper
4 tbsp olive oil
1 tsp salt
1 tsp black pepper
